Catalan cooking, la cuina catalana, has a history dating back to the Middle Ages, its s recipes recorded for posterity in the 14th-century El libre del Sent Soví, the oldest surviving cookbook written in Catalan.
This is vegetable-rich fare features aubergine (eggplant), chunky garlic (Aoli), hearty sauces, mountain honey, wild herbs, artisan bread, and liberal olive oil. Luscious desserts like chocolate-swirled profiteroles and creme brûlée!
